Kerem Ben Zimra

The Kerem Ben Zimra series consists of high quality single varietal aromatic wines offering a unique combination of tastes.
Grown along the slopes of the vineyard’s special plateau and harvested during the early morning hours, these wines are aged in French and American oak barrels for 12-14 months, followed by an additional five months aging after bottling. The wines include distinct varieties, and benefit from the unique regional climatic conditions and selective production process which has become an inherent characteristic of Adir Winery.

Kerem Ben Zimra wines are easy to drink and offer a highly pleasurable experience.
The wines combine a blend of tastes to produce a light and enjoyable flavor, suitable for many occasions.

The series has seven wines: Cabernet Sauvignon, Shiraz, Grenache Blanc, Colombard, Sauvignon Blanc ,Orange Chardonnay and Rosé

Winemaker edition

The Winemaker Edition series comprises red and white wines blended from special varieties of grapes, each grown and harvested along the slopes of the vineyard’s unique plateau. To create the perfect balance, each variety is planted and harvested at individual times, adhering to the specific attributes and requirements of every type of grape. The Winemaker Edition series is created annually by Adir Winery’s expert winemaker, taking advantage of each season’s harvest to create the perfect blend. This individualistic approach ensures that the distinct taste of the Winemaker Edition is achieved, serving as a select wine created exclusively at Adir Winery.

The manually harvested clusters are always hand selected, ensuring that only the highest quality grapes are chosen and incorporated into the wines. Following harvest, the grapes then undergo a light pressing to maintain the quality of the free-run juice. A special yeast solution for slow and cold fermentation allows for full extraction to achieve maximum potential which, combined with the optimal alcohol content, enhances the taste of the fruit.

These unique blends have a rich bouquet of tastes and can be enjoyed on their own or alongside a meal. They present a wide variety of flavors, and easily complement food without overburdening. The Winemaker Edition is a signature Adir wine, uniquely produced and savored by all, all year round.

Plot 98

The grapes used in this series of dessert wine are the fruit of a unique growth method, and are hand-harvested late in the season. 

On arrival at the winery each cluster is carefully selected, the fruit is separated from the stalk and the juice undergoes partial fermentation until the desired level of sweetness is achieved. The addition of alcohol stops the fermentation and the wine is aged in oak barrels for a period of 30-36 months – outdoors – where the temperature in the barrel changes dramatically between seasons.

Plato

Plato is produced solely in the years when the harvest reaches the utmost standards of excellence. Grapes intended for this exceptional series undergo a stringent process of selection and production.
Following harvest, clusters are hand selected to ensure that only the highest quality are chosen. After crushing, a 72-hour cold-soak, and careful fermentation, the wine is transferred to French oak barrels where it is aged for 24 months. These wines undergo an additional 8 to 12 month aging period in bottles.
Plato has received prestigious awards and international recognition. It is a sophisticated and multi-faceted robust wine, incorporating a perfect balance between a wide range of aromas and flavors.

November

November is our most exciting month, when we choose the final blends that make up our wines, tasting each and every barrel in our cellar.

Our November wine is blended from only the most exceptional barrels of the harvest, and as such, it changes from year to year.

November 2019 is a blend of Cabernet Sauvignon, Petite Sirah and Marselan, which is aged for 24 months in high-density 500 liter French oak barrels.
